You think your eyes are playing tricks on you as you see steam hover, but surely it must be a mistake, right? Just in case, you blow over the tip and shiver, waiting, that helix expectation sending your heart thumping against the inside of your chest. Opening your mouth, you wrap your mouth around it and … Chicken Taco Stew, by D.C. Stone 3 whole skinless, boneless chicken breasts 1 can (16 ounces) of black beans 1 can (16 ounces) of kidney beans 1 can (16 ounces) of red beans 1 can of Mexicorn 1 can (8 ounces) of tomato sauce 1 can (10 ounces) of diced tomatoes with green chilies 1 can (8 ounces) of whole original tomatoes Taco mix or (1 tbsp chili powder, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp crushed red pepper flakes, ¼ tsp oregano, ½ tsp paprika, 1 & ½ tsp cumin, 1 tsp sea salt, and 1 tsp black pepper) Sour cream Shredded cheese Tortilla chips Directions: 1. Place the beans (all), mexicorn, tomato sauce, tomatoes, green chilies, and taco mix in a slow cooker. Stir to blend. Lay thawed chicken breasts on top and press down only enough until they hover just beneath the surface. Cover, set on low heat, and cook for 5 hours. 2. Remove chicken breasts and cut, or shred, into smaller pieces. Put the chicken back inside the slow cooker and cook on high now, for an additional hour. 3. Serve with a dollop of sour cream, shredded cheese, and tortilla chips. Beer optional! My boys, or errr Justice Demons enjoy making this very easy meal on a nice spring day.
